(The initial concept of Vegemite was invented by Fred Walker at his food processing plant in 1923. He later sold this business to Kraft and passed on the secret recipe. It is now the most popular spread in Australia.)

Australians love Vegemite Yeast Extract… it is part of Australia's history and has become a unique and loved symbol of our nation. This strange looking black spread, made by blending brewer's yeasts, is one of the richest known sources of B complex vitamins. Australians traditionally use Vegemite Yeast Extract spread thinly on buttered toast, sandwiches and biscuits.

Ingredients: Yeast extract, salt, mineral salt, (508, 509) malt extract, natural colour, (150) vegetable extract, thiamine(E), riboflavin, niacin.

It's an obsession that began many years ago, - an obsession with a black yeast spread that runs deep through the veins of the Australian psyche.

This year the mainstay of breakfast tables from suburban kitchens to five-star hotel buffets celebrates its 75th birthday. The first batch made in 1922 was made from brewer's yeast, onions, celery and sea salt and a few secret ingredients.   It is one of the richest known sources of the vitamin B group.    After a national competition  to find a name in 1923, it was launched as Vegemite.

Before the outbreak of world war II the British Medical Association gave Vegemite an official product endorsement, and the Australian armed forces were supplied with 3.18kg and 226g tins of the stuff, as well as 14g individual packs.

22.7 million jars of Vegemite are manufactured in Australia every year - that's 235 jars per minute.

Vegemite is made from a blend of yeasts from a number of sources.

How we like it:

Thick crusty white bread with Vegemite, tomato cottage cheese and shallots.
Hot toast, butter melted and a thick slather of Vegemite.
A soup spoon of Vegemite in a cup of boiling water with  hot buttery toast.
A lot of butter  and a little bit of Vegemite and a lot of lettuce.
Vegemite and cheese, over pate.
Vegemite and honey.
Peanut butter and vegemite on hot toast.
Four seed bread with vegemite.
