The mainland Kangaroo is a very lean, protein rich meat, low in cholesterol, high in polyunsaturated fatty acids and iron.  Unlike sheep and cattle the marsupials are not treated with the potent chemicals   regarded necessary for the health of introduced grazing stock.The red kangaroo, the eastern grey, and the western grey exist in abundance and are culled for human consumption. This Australian game could wear an "organically reared" tag, just as comfortably as it wears the red tick of approval from the Australian Heart Foundation.

WITJUTI (wicheddy) GRUBS

Insect foods are rich in protein and high in energy with great survival value.  This value has long been recognised by the indigenous population and more recently, the Australian Army.There are several insect larvae known as witjuti grubs, but the true  Witjuti grub, the one considered the greatest delicacy - is found in the roots of "Acacia Kempeana" a wattle known to the Central Australian aborigines as the witjuti bush, meaning the food tree.

BARRAMUNDI

The barramundi is an ancient fish. It belongs to the family of giant perch that swam rivers and estuaries  in the Eocene epoch 55 million years ago.     Today it lives in the brackish rivers, creeks and swamps of lush tropical and sub-tropical Northern Australia.   There are several varieties of "lates calcarifer" .  Barramundi found in estuaries or areas of higher salinity tend to be elongated with a green-grey upper body and s silver lower body with  yellowfish fins.  Freshwater barramundi have a much darker upper body and fins with a golden coloured underbody and a much larger girth tapering  into a strong, thick tail.
